Many people love Beef Stroganoff – I mean – how can you not. Here are two different recipes that are both for slow cooking. Of course, the best thing, is to combine the ingredients and let simmer for hours. When done, prepare to Enjoy.

1.)  Healthy Beef Stroganoff with No Cream Soup

INGREDIENTS

–  Rice or Egg Noodles cooked according to directions on package
–  2-3 pounds stew meat
–  1 teaspoon salt
–  1/2 teaspoon Coarse Black Pepper
–  1 yellow onion diced
–  1/2 teaspoon garlic salt
–  2 tablespoons Worcestershire Sauce
–  1 1/2 cups beef broth
–  1 tablespoon Ketchup
–  1/3 cup flour
–  6-7 tablespoons apple juice or water
–  10-12 ounces sliced mushrooms
–  1/2 cup sour cream

DIRECTIONS

Prior to Cooking:
1.)  Place stew meat in the crockpot, top with diced onions.
2.)  Add in salt, black pepper, and garlic salt.
3.)  In a small bowl combine Worcestershire sauce, beef broth and ketchup. Whisk together until all ingredients are combined.
4.)  Pour ingredients over the beef and onion mixture and stir to combine.
5.)  Cook in slow cooker on low for 7-9 hours

1/2 hour prior to finishing:
6.)   In a small bowl combine flour and apple juice (or water).  Whisk this as well and pour over beef mixture in the crock pot and stir vigorously. Add in mushrooms. Cook for another 30 minutes on high.

Right before serving:

7.)  Cook the egg noodles according to their package directions.
8.)  Stir in sour cream.
9.)  Pour over noodles or rice. Consider mixing together before serving.

***(Can cook on high for 4-5 hours)

1.)  Prep – 10 minutes
2.)  Cook – 7 hours
3.)  Total – 7 hours 10 minutes

2.)  Healthy Beef Stroganoff with Dill and Dijon Mustard

INGREDIENTS

  –  1 1/2 lb. beef stew meat
  –  1 1/4 cups low-sodium beef broth
  –  2 cups (about 6 oz.) coarsely chopped white mushrooms
  –  1 medium onion chopped
  –  3 tbsp. Worcestershire sauce
  –  2 garlic cloves minced
  –  1 tsp. salt
  –  1/2 tsp. ground black pepper
  –  1/4 tsp. dried dill
  –  1 (12 oz.) package egg noodles
  –  1 cup sour cream
  –  2 tbsp. dijon mustard

Instructions

Prior to Cooking:
1.)  Add the meat, broth, mushrooms, onion, Worcestershire, garlic, salt, pepper, and dill to a 6-quart oval crock pot. Stir well.
2.)  Cover and cook on low for 8-9 hours.
15 minutes before serving:
3.)  Cook the egg noodles according to their package directions.
4.)  Add the cooked and drained noodles to the crockpot.
5.)  Add the sour cream and mustard. Stir well.
6.)  Cook another 15 minutes, stirring occasionally.

2.)  Cook – 8 hours
3.)  Total – 8 hours 10 minutes
