Chuck Roast Recipes can be delicious if you have the time and good preparation. It takes a good three plus hours for this recipe. It’ll take time to prepare a rub and to cook. But the end result can be delicious. Such a roast can be a perfect Sunday dish or really, any day of the week.
Chuck Roast Braised
INGREDIENTS
– 3.5 lb. Beef Chuck Roast
– 2 Carrots – chopped
– 2 stalks of Celery – chopped
– 1 Sweet Onion – large and chopped
– 4 or 5 Garlic Cloves – chopped
– 1 tablespoon Tomato Paste
– 1 can of crushed Tomatoes – 29oz
– 2 teaspoon Salt
– 1.5 teaspoon Black Pepper – ground
– Dash of grated Nutmeg
– 1/2 teaspoon sweet Paprika
– 1/2 cup of Italian Parsley (stems removed) – chopped
– 6-8 fresh Basil leaves – ripped
– 1 teaspoon dried Oregano
– 1/4 cup grated Romano Cheese or Parmesan Cheese
– Olive Oil
– 1 lbs of Pasta – Choose your own
*** – Option: Switch out Pasta for Rice or Potatoes
DIRECTIONS
Prior to Cooking:
1.) Create the Rub
2.) Add 1/2 teaspoon Salt, 1/2 teaspoon Pepper, 1 teaspoon Oregano, and 2 tablespoon Olive Oil – Into Small Bowl
3.) Rub Meat down with the mixture
4.) Add 3 tablespoons of Olive Oil to saucepan and heat
5.) Add Meat, Carrots, Onion, and Celery to saucepan after it is hot
6.) Brown the Onions, Veggies, and Meat
7.) Turn Meat over to brown on all sides
8.) Add Tomato Paste, grated cheese, and Crushed Tomatoes
9.) Simmer on low heat
10.) Add Salt, Pepper, Garlic, Paprika, Parsley, Basil
11.) Continue to simmer on low heat for 2.5-3 hours
12.) Check meat – should be tender when pierced
1/2 hour or so prior to finishing:
13.) Begin preparing Noodles
Right before serving:
14.) Remove Chuck Roast and cut into pieces
15.) Take sauce and place on Roast and place on plate with Pasta.
16.) Add grated Cheese and a drizzle of Olive Oil
17.) Add additional Salt, additional Pepper if desired
